It's officially autumn! In Milwaukee, it was nearly 80 degrees this afternoon, and unfortunately, the weather forecasters have mentioned a big cool-off over the next few days. Alas. Time to pretend they're wrong for a while...
While planning meals for the week yesterday, Ms. K and I agreed to have "squash surprise" for dinner tonight. (Squash surprise is a fancy way of saying "we'll harvest whatever we can from the garden and make something of it").
The meal started off similarly to the Garden dinner: late summer edition, but with a few changes. Most notably, we were able to snap pictures!
I harvested basil, tomatoes, two kinds of kale, and yellow squash from the garden. Ms. K used her magic spiralizer to turn squash into a noodle substitute. In a sauce pan, I sauteed onions*, garlic*, tomatoes, and basil to make a nice tomato sauce (freshest is best...). To that, I added a can of chickpeas*, and once the tomatoes had broken down a bit, the kale went in. Ms. K sauteed onions garlic first, then added the spirilized squash to the pan. A few mozzarella pearls, some grated parmesan cheese, and red pepper flakes made for an excellent garden dinner, round two.
