What to do with all of that lettuce?

We are so excited to eat a lot of salad! It's true! Fresh garden lettuce and spinach, some grilled vegetables from Sunday night, a bit of grilled of corn that I sliced from the cob, a handful of grilled chicken plus a quick dressing made an excellent lunch today.

Creamy Dijon Dressing
(makes 2+ servings for individual lunch salads)

1 tsp Dijon mustard
1 T mayo
1 T olive oil
1 T champagne vinegar
salt, pepper, garlic powder

Combine until well blended. I use a Magic Bullet to whip up dressings, but a jar would work, or even just a fork and a bowl.
