I baked with zucchini on Sunday. The food processor came in very handy when it was time to grate one of our monstrosities. One zucchini yielded nearly 9 cups! Good lord.
I made this recipe and muffins with dried cranberries and still had two cups of grated zucchini left so I meant to do this one as well, but the kitchen was dirty, I was tired, I wanted to sit down, and so I did. Sit down, that is.
One zucchini (and two cups) to go!
UPDATE (9/17/15): What did we do with the remaining 2 cups of grated zucchini? We used it on tacos and tostadas, which we ate for dinner a few days this week after I prepared a pork roast in the slow cooker on Tuesday. Tasty!
